Lemon Blueberry Oatmeal Muffins

Ingredients

  • 1 ¾ cups Quaker Quick Cooking Oats
  • 2 Tbsps. firmly packed brown sugar
  • 1 cup all purpose flour
  • 6 cups granulated sugar
  • 1 Tbsp. baking powder
  • ¼ tsp. salt (optional)
  • 1 cup skim milk
  • 2 egg whites
  • 2 Tbsps. canola oil
  • 1 tsp. grated lemon peel
  • 1 tsp. vanilla essence
  • 1 cup fresh or frozen blueberries (do not thaw)

Procedure

1 Heat oven to 400°F.
2 Spray 12 medium muffin cups with cooking spray and set aside.
3 For topping, combine 3/4 cup oats and brown sugar, and set aside.
4 In a large bowl, combine the remaining 1 cup oats with the other dry ingredients, and mix well.
5 In a small bowl, combine milk, egg white, oil, lemon peel and vanilla essence; and add to the dry ingredients and mix well until moistened (Do not over mix).
6 Gently stir in berries.
7 Fill the muffin cups until almost full.
8 Sprinkle the topping into the muffin cups.
9 Bake for 18 to 22 minutes or until light golden brown.
10 Cool the muffins in a pan on a wire rack for 5 minutes.
11 Remove from the muffin cup and serve warm.
