A well-stocked pantry makes it easier to eat better. You can whip thing up on the fly, like a savory congee with the goodness of oats.
½ cup Quaker Instant / Quick Cooking Oats
1 ½ cups vegetable stock
1 tsp. olive oil
5 cloves garlic, chopped
¼ cup mushrooms, sautéed
¼ cup bean sprouts
2 scallions, sliced
1 handful cilantro, finely chopped
½ tsp. fresh ginger, finely chopped
1 Tbsp. soy sauce
1 Tbsp. fresh lime juice
1 In a large pan, cook oats with vegetable stock and add poached egg.
2 Add in mushrooms, bean sprouts, garlic and oil.
3 Stir in bean sprouts, scallions and cilantro.
4 Once oatmeal is cooked, add the other ingredients, mix well and serve.
