½ cup whole wheat flour
½ cup all-purpose flour
1 cup Quaker Instant / Quick Cooking Oats
1 tbsps. sugar
1 tsp. baking powder
¼ tsp. salt
½ cup butter
½ cup low or non-fat milk
1 cup strawberries, finely chopped
1 Pre-heat an oven to 220°C (430°F).
2 In a bowl, combine flour, oats, sugar, baking powder and salt.
3 Add butter and milk.
4 Mix well until all the dry ingredients are moist.
5 Roll the dough into a ball and knead on a lightly floured surface.
6 Pat the dough to about half inch thick.
7 Using an oval-shaped cookie cutter, cut the dough into oval-shaped shortcakes.
8 Using a smaller oval-shaped cookie cutter, make an indent in the center.
9 Place the shortcakes on an ungreased cookie sheet.
10 Bake for 12-14 minutes or until the shortcakes brown.
11 Serve the shortcakes with strawberries on top.
