Fig & Honey Toasted Muesli

INGREDIENTS:

Serves 10 | 381 Kcal/serving
1 tsp. olive oil
2 Tbsps. olive oil
2 Tbsps. honey
1 tsp. cinnamon
3 cups rolled oats
½ cup almonds, sliced lengthwise
¼ cup pumpkin seeds
2 Tbsps. Sesame seeds
½ cup sultanas
½ cup dried figs, chopped
5 cups low fat unsweetened plain yogurt
5 medium bananas, sliced into rounds

PROCEDURE
1. Grease 2 large baking trays with oil and set aside.
2. Pre-heat an oven to 180°C (350°F).
3. In a small non-stick pan pour oil, honey and cinnamon.
4. Heat until the mixture is combined.
5. Pour in the oats and stir well to coat the oats in the spice mixture.
6. Spread out a thin layer of oat mixture over the greased baking trays.
7. Put both the trays in the oven and bake for about 20 minutes, stirring 2-3 times until evenly brown and crisp.
8. Swap trays halfway to ensure even cooking.
9. Add almonds, pumpkin seeds and sesame seeds during the last 5 minutes of cooking.
10. Allow the mixture to cool and stir in the sultanas and dried figs.
11. Mix well and store the mixture in an airtight container.
12. To serve: Pour out half a cup muesli in a bowl, top with half a cup of yogurt and garnish with sliced bananas.
