Oat & Cottage Cheese Pancakes

Pancakes are a childhood favorite.  Learn how to incorporate high-fiber oats and protein-packed cottage cheese into this breakfast staple. 

1/2 cup Quaker Old-Fashioned or Rolled Oats
1/2 medium banana
1 tsp. baking powder
1/2 tsp. cinnamon powder
2 large egg whites
1/4 cup low fat cottage cheese
1-2 Tbsps. unsweetened vanilla almond milk
2 tsps. unsaturated margarine, to grease the pan
Optional add-ins: Fresh berries, chocolate chips, peanut butter

1. Place all ingredients in a blender and blend until completely smooth for about 30 seconds.
2. Lightly coat a large non-stick pan with 1/2 teaspoon margarine and heat over a medium to low flame.
3. Drop batter by 1/4 cup onto the pan. Add desired toppings such as chocolate chips or blueberries.
4. Cook until bubbles appear on top. Flip cakes and cook until golden brown on the other side.
5. Wipe the pan clean and repeat with the remaining batter.
6. Makes 3-4 pancakes.
