Let's take it up a notch with a more complicated recipe. This is perfect for family gatherings, especially if your family is filled with meat lovers! But of course, this is the healthier version. We hope you like it!
1 ½ lb. lean ground beef
1 cup tomato juice
¾ cup Quaker Quick Cooking or Old fashioned Oats, uncooked
1 large onion, chopped finely
1 egg, lightly beaten
4-6 tsps. Mexican seasoning blend
3 slices low fat cheese
1 Heat an oven to 350ºF.
2 In a large bowl, mix beef, tomato juice, oats, onion, egg and seasoning thoroughly.
3 Divide the beef mixture into 6 equal parts.
4 Shape each beef portion into a 4 x ¾-inch oval loaf to make a mini boat and press the back of a measuring Tbsp. onto the top of each beef boat to form a pocket (This will hold the salsa in place!).
5 Bake the beef for about 25-28 minutes or until the center is no longer pink.
6 Fill with salsa and serve immediately.
