Banana Oatmeal Raisin Muffins

Everyone loves a good muffin. This recipe makes a batch of grab-and-go breakfasts, or tasty afternoon snacks!



  • 2 tsps. olive oil
  • 2 ½ cup olive oil
  • ½ cup icing sugar
  • 1 ½ cups rolled oats, grind to a powder
  • ¼ tsp. salt
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 cup low fat milk
  • 2 eggs, lightly beaten
  • 5 ripe medium bananas, mashed
  • ¼ cup raisins


1 Grease 15 muffin paper cases with oil and set aside.
2 In a bowl, whisk oil and sugar until creamy.
3 In another bowl, sift in a mixture of oats, salt, baking powder and baking soda.
4 Add milk, eggs, bananas and raisins to the oat mixture and blend. You can also use this recipe with an electric blender.
5 Dish out the mixture into the greased muffin paper cases.
6 Bake the muffins at 180°C (350°F) for 25 minutes or until the muffins are cooked (If a toothpick inserted in the center comes out clean, the muffin is cooked).
7 Let it cool and serve.
