Banana Oats Bread

Ingredients

  • 1 cup Quaker® Rolled Oats
  • 1 tbsp Quaker Rolled Oats (topping)
  • 1/2 cup soymilk or milk
  • 1 cup mashed very ripe bananas (about 3 medium)
  • 4 egg whites, lightly beaten
  • 1/2 cup canola oil
  • 2 cups all-purpose flour
  • 3/4 cup coco sugar
  • 2 teaspoons baking powder
  • 1 teaspoons ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup raisins
  • 1/4 cup chopped walnuts
  • 1 sachet clium fiber – for added moisture (optional)

Procedure

1 Preparation

In a bowl, combine oats and milk; mix well. Let it stand for 10 minutes. Sift together flour, sugar, baking powder, baking soda, and salt. Add cinnamon and clium to mashed bananas. Add canola oil to dry ingredients; mix well. Add half of the bananas. Add half of the oat mix then the rest of the bananas. Add egg, raisins and the rest of the oat mix. Mix well.

2 Baking

Preheat the oven to 177°C. Lightly grease the bottom of a 9 x 5-inch loaf pan with cooking spray or canola oil. Pour batter into the loaf pan. Top with toasted oats and chopped walnuts. Cover loosely with foil. Bake for 50 to 60 minutes. Cool in a pan on a wire rack for 10 minutes. Uncover in the last 5 minutes to toast oat toppings. Remove from the pan and let cool completely. Store tightly wrapped.
