1 In a small bowl, mix nutmilk, vanilla and coco oil. Set aside.
2 In a microwaveable mug, mix oats, baking powder, 1/8 tsp ground cinnamon and salt. Stir in the nutmilk mixture. Mix well.
3 Whisk the honey and raisins into the batter.
4 Prepare the topping. In a separate bowl, mix sugar and cinnamon. Use the tip of a knife to swirl sugar-cinnamon mix into the batter.
5 Microwave on high between 1 min and 45 seconds to 2 minutes. Let cool and transfer muffin on a plate. Serve warm.
