1 Cook the oats in 3/4 cup hot water with 1/8 tsp salt according to package directions. After cooking, set aside to cool.
2 In a big bowl, combine oats with all the vegetables.
3 Prepare dressing. Blend together lemon juice, salt, and pepper while streaming in the olive oil. Blend until emulsified.
4 Pour dressing into oats and vegetables mix. Toss and mix well. Serve cold or at room temperature.
