Mediterranean Oats Salad
8 tbsp Quaker® Old-Fashion Rolled Oats
¾ cup hot water
1/8 tsp fine sea salt
2 tbsp mint coarsely chopped
¼ cup tomatoes seeded, coarsely chopped
¼ cup parsley coarsely chopped
¼ cup cucumber, peeled, seeded, chopped
1 tbsp green onions
½ tbsp lemon juice
1 ½ tbsp extra virgin olive oil
1/8 tsp salt
1/8 tsp pepper
1 Cook the oatsin ¾ cup hot water with 1/8 tsp salt according to package directions. After cooking, set aside to cool. In a big bowl, combine oats with all the vegetables.
2 Prepare dressing. Blend together lemon juice, salt, and pepper while streaming in the olive oil. Blend until emulsified.
3 Pour dressing into oats and vegetables mix. Toss and mix well. Serve cold or at room temperature.
