1 Cook the oats in 3/4 cup hot water with 1/8 tsp salt according to package directions. After cooking, set aside to cool. Add corn, red onions, pimiento, beans, cheese, and cilantro.
2 Prepare the dressing. Whisk the lemon juice, honey, olive oil, cumin, and salt together in a small bowl. Pour over the oat mix and stir gently to coat.
3 Serve cold or at room temperature.
