Southwest Oats Salad


8 tbsp Quaker® Old-Fashion Rolled Oats
¾ cup hot water
1/8 tsp fine sea salt
2 tbsp whole kernel corn
2 tbsp chopped red onions
1 tbsp chopped red bell pepper
¼ cup cooked black beans
1 tbsp chopped carabao cheese or feta cheese
2 tbsp chopped cilantro
½ tbsp lemon juice
½ tbsp honey
1 tbsp olive oil
¼ tsp cumin
1/8 tsp salt


1 Cook the oats in ¾ cup hot water with 1/8 tsp salt according to package directions. After cooking, set aside to cool. Add corn, red onions, pimiento, beans, cheese, and cilantro.
2 Prepare the dressing. Whisk the lemon juice, honey, olive oil, cumin, and salt together in a small bowl. Pour over the oat mix and stir gently to coat.
3 Serve cold or at room temperature.
